Cleaning thermocouple

Two questions,
1) How do I or should I clean the thermocouple?
2) For the first two times ever I have had large temperature variations on my YS-640. Set up is BBQ Delight Pellets (hickory/pecan). First cook with temp variance I was smoking a turkey with set temp of 325. Bird was spatchcocked 13.5 lbs. I did have a water pan with vegetables, turkey parts, and water under the bird for gravy. Had two Maverick digital thermometers running on either side of bird. To keep it at 325 grate temp had to run grill at 425. Ambient temp low 60’s and grill out of wind. When grill said 325 grate temps were 225-230. This was new me as usually the top grate is within 8 -10 degrees of Temp showing on Mavericks. Thought it might just be large gravy pan being a heat sink. Then today was cooking jalapeño poppers at 350. After waiting 30 minutes with grill at its “set point” 356 my maverick probes showed 320 on RT and 316 on LT. Put poppers on and Turned grill up to 375, cooked for 25 minutes. Food was done, however Maverick probe on top was 308 and bottom just RT of middle was 320. Ambient temp in the 40’s, but, was out of the wind.
