temp off by 100+ degree but maintains temp

temp off by 100+ degree but maintains temp

Currently have a 2015 YS 640 thermocouple is about 1 year older just replaced, but temperature is about 100+ degrees off, temperature reading doesn't have massive variations as if thermocouple was bad starts up fine still about 30 mins to get to temp and it maintains temperature like normal at set temp but overall temp is off by about 100+ degrees had to set to about 400 to get 275. Both fans work, unplugged and waited 60sec. any ideas?
