YS 640 wth chimney/smoke stack

I am building an outdoor kitchen and I'd like your thoughts... I have decided to purchase a 640 and build it in. Because its a small space and under roof I think I will need to get some of the smoke out of there or I will choke. Though not doing the full range hood because of space and asthetics I will have an exhaust fan. But I am also thinking of installing a small stove pipe/chimney to the 640's smoke stack and run it out through the roof. Is there any reason why this is a bad idea for cooking? I know I'll still have some smoke (which I like and want) but at least we won't be choking in it. I have a pellet pooper but it has vents not a stack so I'm not sure if access to the stack cover is important in a 640. Thoughts? Thanks in advance!
