Let them ride. 275 for about 4 hours. I do rotate at 2 hours. Other than that cooker stays closed until I start checking for doneness.

Herb, when you say.."275 for about 4 hrs......." is it 275 from the cookers digital read out..... or 275 at the grate measured with a different thermometer such as Maverick or such? Thanks in advance

I set the cooker for 275 and let the cooker do it's thing. I never use any temperature probes anymore, except for an instant read for checking what I am cooking.
The 4 hours is an approximation, as all ribs cook differently because of different thickness, different animals, etc. I use time as a guide, and always cook to either internal temperature or "feel" (bend test, toothpick test, bone twist, etc.).

No pictures of the finished product, they didn't last long enough to get any. They looked just like they do in the picture, only cooked.

First run of my YS640. 3 sets of Baby Backs each with different rub. 3-2-1 method at 225. Pecan pellets.
All turned out great and smoker did a fantastic job. Next run will be shoulder or brisket....or maybe both!
