haven't purchased my 640s yet, but was thinking about getting the fireboard stand alone unit. This way I can get used to the app, and when I get my 640s & do a lot of meat, I can have more than 2 probes recording temps.

How would that work on the phone app? Would I have 2 separate fireboard units listed on the app, and switch back & forth between each unit to read the temps?

Yes, you would need to tell the app about both units, but the app combines the two into one graph.
