Is there any problem with leaving my Yoder at 490 for an hour. Sometimes I like to turn it up at a higher heat and let it sit for a little bit before cooking. Especially when using the griddle and making burgers.

You can certainly leave the cooker run at 490 for an hour and not cause any harm at all.
