I am a relatively new Yoder ys640s owner. I’ve had some major ups and downs with this things so far. I did my first overnight cook on a dry aged brisket. I had some major temp fluctuations during the night. It was set at 190 and at one point dropped down below 140. It constantly seemed to struggle.
Anyone willing to look at my temp chart and tell me if this seems normal?

DV, I took a look and I have never seen my auger peaking and oscillating to that extent. It usually runs in stair steps with fewer pronounced peaks as your cook shows. Here is a recent run on mine. The auger seems to adjust in three steps. BTW, you can see when I was looking instead of cooking! Those temperature drops were me opening the grill and moving fish around.

Did you have an A-Maze-N Smoker tube in it? I have noticed that if you get that too close to the pit control thermocouple, the heat from it will confuse the control system.
I am a relative newbie with this pit and only have ~8 cooks under my belt.
No smoke tube! Just the regular grill closed lid. Didn’t even check it that much.
