First cook on the 640. Set the temp at 250. My door thermometers read 200. My grate probe is about 235. Typical? One more question...does meat tend to dry out? Do i need a water pan? Thanks! Btw its brisket

First the door thermometers: viewtopic.php?f=53&t=1153&p=7260#p7260

the Yoder cookers cook from the bottom up, and if you are attempting to take temperatures with an external probe, it must be lying directly on the grate and not within 6" of anything in the cooker. The correct placement is just left of center and centered front to back. There is absolutely no reason to use a water pan.
